Ingredients
- 1–2 lbs 80/20 brisket blend ground beef (form into 71g balls)
- Martin’s potato buns
- Sliced cheese (American or cheddar recommended)
- Sliced onions (optional, but highly recommended)
- Little Lu’s BBQ SPG Seasoning (Salt, Pepper, Garlic blend)
Instructions
1. Preheat the Blackstone
Turn all four burners on high and let the griddle heat up until it’s smoking hot. You want that surface blazing to get the perfect sear.
2. Oil and Adjust Heat
Once you see smoke rolling, drizzle a little olive oil across the griddle. Turn your last burner down to medium — this will be your cooler zone for buns and onions later.
3. Get the Patties Down
Place your 71-gram brisket balls on the hot surface. Let them sit for about 30 seconds while you toss your Martin’s potato buns onto the cooler side to toast.
4. Smash the Burgers
Using a sturdy burger press or spatula, smash each patty thin. The thinner, the better — that’s how you get that crispy, caramelized crust.
5. Season and Sear
Sprinkle generously with Little Lu’s SPG Seasoning. Let them cook for about 3 minutes on the first side without moving them — this builds that crusty edge everyone loves.
6. Flip and Melt
Flip your burgers, admire that crust, and top with cheese immediately. Add onions now if you’re using them. Let everything cook for another 2–3 minutes while the cheese melts perfectly.
