What You’ll Need:

  1. Boneless, skinless chicken thighs
  2. Bell peppers, onions, and any other fajita-worthy veggies
  3. Tortillas (flour or corn—your call!)
  4. Salsa verde (store-bought or homemade)
  5. Little Lu’s Fajita Seasoning
  6. Smoker or grill
  7. Wire rack or veggie pan

1. Preheat your smoker to 400°F. Get it hot and ready to bring that smoky goodness.

2. Coat those chicken thighs and veggies liberally with Little Lu’s Fajita Seasoning. Let them rest for 15 minutes so the flavor sinks in.

3. Once the smoker’s at temp, toss your veggies onto a wire rack or veggie pan and let them start their smoky journey.

4. After 5–8 minutes of veggie cook time, it’s chicken’s time to shine. Place the thighs directly on the grill and cook 7–10 minutes per side. You’re looking for a beautiful char. Rotate and toss the veggies every 5–10 minutes to keep them cooking evenly.

5. About 5 minutes before everything’s done, throw the tortillas on the grill for a quick warm-up. A little toastiness goes a long way.

6. Pull the chicken, veggies, and tortillas off the smoker. Let them rest a few minutes—this locks in those juices and flavors.

7. Time to assemble! Load up those tortillas with smoky veggies, juicy chicken, and a splash of salsa verde. Serve immediately and enjoy the flavor-packed payoff.

Pro Tip:

Pair with a cold cerveza or a fresh margarita for maximum backyard magic.
